This soft and sweet chocolate buttercream frosting is made using real chocolate. It adds depth, flavour and texture. I use this frosting ALL the time. It’s really moist (sorry anyone who hates that word – it is TRUE!) so keeps well in a tin for up to 4 days. The premise of the bake is essentially the exact same, but just better. I went for a Malt Chocolate sponge, and a Malt Buttercream Frosting because it just tastes sooo good along with the Malteser, and I can’t get enough. A two-layer chocolate malt sponge, with chocolate spread filling, malt buttercream frosting, maltesers, and more! Perfect Malteser cake! One thing I will say AGAIN with this fudgey type cake recipe is that the coffee is IMPORTANT. Don’t worry, you can NOT taste the coffee in the cake, but it just enhances the richness of the chocolate in the sponge and takes it to the next level.

You will need either a 20x20cm or 32x22cm baking tin, baking paper to line the tin and a small palette knife to spread the chocolate over the traybake. Over the years I’ve used the Nigella Malteser Cake recipe and also the Mary Berry Malteser Cake recipe. This one recipe of mine, is a bit of a hybrid of the two, with my own adjustments; making it larger (obvs) and simplifying slightly. Eight: Refrigerate for 2 hours before lifting the tiffin out of the tin (using the overhanging clingfilm) onto a chopping board and cutting into bars with a sharp knife. 💭 Expert tips This Maltesers Cake is absolute Maltesers heaven! Try This Tip

Please, for the love of god, don’t take out the coffee. People I know aren’t the biggest coffee drinkers, and some even hate it, but they all say they can’t taste it in the recipe and it is delicious.

For teaspoon (tsp) and tablespoon (tbsp) measurements, please use measuring spoons* and not the type of spoons you eat with. Again this will ensure accuracy and provide the best results.

I used a mix of sugars for the sponge. You can use all caster sugar or all light brown soft sugar if you prefer. Then sandwich the cakes together, spreading icing across the middle of each layer, and piping dollops of icing around the edge. (I use just a piping bag with the end snipped off.) One: Place the chopped dark chocolate and milk chocolate in a heat proof bowl with the butter and golden syrup. Microwave in 30-second bursts, stirring with a wooden spoon inbetween. Allow to cool to room temperature.
